Place the oats, vanilla seeds, milk and cream in a heavy-bottomed saucepan. Simmer for four minutes until thick.

To make the caramel sauce, in a hot pan add the butter and sugar and cook for 3-4 minutes. Next add the cream and orange segments.

Serve the vanilla oats with the caramel and oranges.

- 100g/3½oz oats
- 1 vanilla pod, seeds removed
- 200ml/7fl oz milk
- 50ml double cream
For the caramel sauce
- 50g/1¾oz butter
- 50g/1¾oz caster sugar
- 50ml/1¾fl oz double cream
- 1 orange, peeled and sliced
