Method

Bring the water to simmering point in a saucepan. Add the vanilla pods and seeds, sugar, rum, limes and whole apricots. Stir until the sugar melts, and poach the apricots for 12 minutes.

To serve, pour into a large warm bowl.
Ingredients
- 250ml/9fl oz water
- 2 vanilla pods, split and seeds scraped out
- 50g/2oz brown sugar
- 1 tbsp rum
- 2 limes, sliced in half
- 5 ripe apricots
