Ginger trifle

  1. Cut the cake into pieces and place in the base of a small glass bowl. Pour over the custard.

  2. Place the cream into a separate large bowl and fold in the raisins and pecans.

  3. Spread the cream mixture on top of the custard.

  4. To serve, sprinkle over the remaining pecans and place servings of the trifle into bowls.


  • 3 slices ready-made ginger cake
  • 150ml/¼ pint ready-made custard
  • 150ml/¼ pint double cream, whipped until soft peaks form when the whisk is removed
  • 3 tbsp raisins
  • 3 tbsp pecans, roughly chopped, plus extra, to serve
