Tomato, spinach and fish curry

  1. Heat the olive oil in a saucepan, add the onion and fry gently for 3-4 minutes or until softened.

  2. Add the garlic and Thai red curry paste and fry for one minute. Add the tomato and a splash of hot water and simmer for three minutes.

  3. Add the fish and cook for 1-2 minutes or until cooked through.

  4. Stir in the spinach leaves and chopped coriander. Spoon onto a plate and serve.


  • 2 tbsp olive oil
  • ½ onion, finely sliced
  • 1 garlic clove, chopped
  • 1 tsp Thai red curry paste
  • 1 fresh tomato, chopped
  • splash hot water
  • 150g/5½oz whiting, skinned, chopped
  • small handful fresh baby spinach leaves
  • 1 tbsp chopped fresh coriander
