Tomato mozzarella salad

Method

Place the cherry tomatoes onto a plate.

Heat the oil in frying pan and when hot, add the mozzarella and fry for one minute on each side, until golden.

To serve, place the mozzarella on top of the tomatoes and sprinkle with basil.

- 8 cherry tomatoes, halved
- 1 thick slice mozzarella cheese
- 2 tbsp olive oil
To serve
- 2 tbsp chopped fresh basil
