Mix the tomato, spring onion, apple, balsamic vinegar, and olive oil together in a large bowl and season to taste with salt and freshly ground black pepper.

Spoon into a serving bowl and top with the poached duck egg.

- 3 tbsp olive oil

- large handful fresh coriander
- 1 duck egg, poached, to serve
