Method

Place the coconut milk, spring onion and lemongrass into a small saucepan and bring to a gentle simmer.

Add the salmon and cook for 1-2 minutes. Stir in the coriander, salt and freshly ground black pepper

Serve straightaway poured into a soup bowl.

- 200ml/7fl oz coconut milk
- 1 spring onion, thinly sliced
- 1 stick lemongrass, roughly chopped
- 125g/4½oz salmon fillet, sliced
- small handful fresh coriander
- salt and freshly ground black pepper
