Stuffin' muffins

Lucky enough to have leftover stuffing? Skip the sandwiches and transform it into a brilliant Boxing Day breakfast.


  1. Preheat the oven to 180C/160C Fan/Gas 4.

  2. Spray 6 ramekins with non-stick spray.

  3. Divide the stuffing equally between the ramekins. Then crack an egg on top of the stuffing. Add 1 tablespoonful of milk or cream to each ramekin and season with salt and pepper.

  4. Place the ramekins in a deep baking tray and fill it partially with boiling water.

  5. Bake for 10-15 minutes until the eggs are set.

  6. Serve with leftover ham for brilliant Boxing Day breakfast.
