Preheat the oven to 180C/350F/Gas 4.
Slice the tops off the tomatoes and scoop out the flesh and seeds.
Mix the rice together with the garlic and spoon the mixture into the tomatoes, then drizzle with olive oil and place on a baking tray in the oven. Bake for 6-8 minutes, or until the stuffing is golden-brown, then transfer to a serving plate and serve immediately.
