Stir-fried prawns and pak choi with lime, soy and coriander

Method

Heat the sesame and vegetable oils in a wok and fry the onion and chilli for 2-3 minutes.

Add the pak choi, lemon, orange and lime juice and zest and soy sauce and cook for a further two minutes, or until the juice is starting to reduce.

Add the prawns and cook until they turn pink. Stir in the chopped coriander.

To serve, pile the stir-fry onto a serving plate and garnish with the paprika-dipped lime wedges and more coriander.

- 1 tbsp sesame oil
- 1 tbsp vegetable oil
- ½ onion, finely sliced
- 1 red chilli, finely chopped
- 2 pak choi, finely sliced
- ½ lemon, juice and zest
- ½ orange, juice and zest
- ½ lime, juice and zest
- 2 tbsp soy sauce
- 3 raw king prawns, shells removed
- 3 tbsp chopped fresh coriander
To serve
- 1 lime, cut into quarters, one side of each dusted with paprika
- 1 small handful coriander leaves
