Preheat the oven to 200C/400F/Gas 6.
Cut a criss-cross cut into the top of each of the figs and press the sides to open out.
Stuff equal amounts of the thyme and Stilton into the open figs.
Wrap the ready-made puff pastry strips around the figs. Place on a baking sheet and place in the oven to bake for ten minutes, or until the cheese is golden and melted.
To serve place the figs in the centre of a plate with a parsley sprig to garnish.
