Sticky chicken wings with healthy slaw

Chicken wings are great if you are cooking on a budget. Try them with this homemade coleslaw for a fuss-free dinner.

Method


  1. Preheat the oven to 200C/180C Fan/Gas 6.

  2. In a large bowl, mix together all the chicken wing ingredients except for the wings themselves.

  3. Remove the tips from the wings and halve at the knuckle. Add the wings to the bowl and toss really well until each wing is completely coated.

  4. Put the wings on a large oven tray in a single layer. Drizzle with a little oil and pop in the oven. Bake for 20 minutes or until completely cooked through and golden-brown, turning half way through.

  5. Meanwhile, make the slaw. Using the large holes of a box grater, grate the cabbage and carrots into a large mixing bowl. Add the remaining ingredients to the bowl along with a pinch of salt and pepper. Toss well.

  6. Serve the wings with the slaw on the side and lots of napkins!

Ingredients

For the chicken wings

  • 140g/5oz tomato purée
  • 2 tbsp runny honey
  • 1 tbsp cumin
  • 1 tbsp vinegar
  • 1 tsp paprika
  • 600g/1lb 5oz chicken wings
  • drizzle of vegetable oil

For the slaw

  • ½ white or red cabbage
  • 3 carrots, peeled
  • ½ lemon, juice only
  • 1 tbsp oil
  • salt and pepper
