Steak with curried sweet potato chips

Method


  1. For the steak, heat the oil in a medium-sized frying pan over a high heat. Add the steak cook and for three minutes on each side, or until cooked to your liking. Remove from the pan and leave to rest for four minutes.

  2. For the sweet potato chips, place the oil and butter into a frying pan over a medium heat. Once the butter has melted, add the sweet potato and curry powder and cook, turning occasionally to brown evenly. Once browned, turn down the heat and continue cooking for six minutes, until soft.

  3. To serve, place the steak onto a plate and place the chips and the steamed broccoli on the side.

Ingredients

For the steak

  • 1 tsp olive oil
  • 150g/5½oz rump steak

For the curried sweet potato chips

  • 50g/1¾oz butter
  • 2 tbsp olive oil
  • 1 small sweet potato, peeled and cut into thick chips
  • 1 tsp curry powder

To serve

  • 100g/3½oz broccoli, steamed
