Spicy pork koftas with sweet potato and carrot mash

Method


  1. Preheat the oven to 200C/400F/Gas 6.

  2. To make the koftas, place the pork, dried chilli flakes, the spices and soy sauce into a food processor and season with salt and freshly ground black pepper.

  3. Divide the mixture into three equal portions and roll each into sausage-shaped koftas. Skewer the koftas onto wooden skewers and rub with the olive oil.

  4. Place an ovenproof frying pan over a medium heat. Add the koftas and fry, turning occasionally, until browned on all sides. Transfer to the oven and bake for five minutes, or until cooked through.

  5. To make the mash, place the sweet potato and carrot into a saucepan of boiling water and boil until soft. Drain the saucepan of water, add the butter and mash the carrot and sweet potato, seasoning, to taste, with salt and freshly ground black pepper

  6. To serve, place the carrot and sweet potato mash onto a warm plate and place the koftas on top.

For the koftas

  • 150g/7oz lean pork
  • ½ tsp dried chilli flakes
  • ½ tsp cumin seeds
  • ½ tsp paprika
  • ½ tsp medium curry powder
  • ½ tsp ground ginger
  • ½ tsp soy sauce
  • salt and freshly ground black pepper.
  • 1 tbsp olive oil

For the mash

  • ½ sweet potato, peeled and finely chopped
  • ½ carrot, peeled and finely chopped
  • 50g/1¾oz butter
  • salt and freshly ground black pepper
