Shredded sprout salad

Method

In a large bowl, whisk together the oil, vinegar, orange zest and juice, and the shallot.

Add the shredded sprouts, toss together and season with salt and freshly ground black pepper.

Serve with the brie slices arranged on top.

- ½ tsp white wine vinegar
- 1 orange, zest and juice
- 1 shallot, finely chopped
- 100g/3½oz Brussels sprouts, trimmed and shredded
- salt and freshly ground black pepper
- 50g/2oz brie, cut into 4 slices
