This simple recipe for a comforting sausage and bean hotpot makes a tasty weeknight supper to make with the kids.
Method

Preheat the oven to 160C/325F/Gas 3.

Mix all of the ingredients together in a lidded ovenproof dish and season with salt and freshly ground black pepper.

Cook in the oven for 20-25 minutes, or until the sausages are cooked through. Serve with mashed potato or crusty bread.
Ingredients
- 1 Â spring onion, sliced
- 30g/1oz cooked cannellini beans
- 1 cabbage leaf, chopped
- 2 tbsp tinned chopped tomatoes
- 2 cooked sausages, sliced
- 75ml/3fl oz stock
- ½ tsp wholegrain mustard
- few stalks fresh thyme, leaves only
