Salt and vinegar sautéed potatoes

Method


  1. Heat the oil in a frying pan and gently fry the chopped potato for 4-5 minutes. Add the garlic, season, to taste, with salt and freshly ground black pepper and continue to fry for a further 4-5 minutes.

  2. Add the vinegar and tomato and stir well. Cook gently until the tomato starts to break down and the potatoes are tender, 10-15 minutes.

  3. Stir in the chopped fresh herbs and serve immediately as a side dish.

  • 2 tbsp vegetable oil
  • 1 baking potato, peeled and chopped into small cubes
  • 2 garlic cloves, halved
  • salt and freshly ground black pepper
  • 1 tbsp red wine vinegar
  • ¼ beef tomato, seeds removed, chopped
  • 2 tbsp fresh basil leaves, torn
  • 1 tbsp chopped fresh coriander
