Runner bean and prawn salad with fresh mint vinaigrette

This summery salad is perfect for alfresco dining, just add some rocket or Little Gem lettuce to bulk it out.

Method


  1. For the yoghurt and mint dressing, mix all of the ingredients and a pinch of salt together in a bowl until well combined.

  2. For the mint vinaigrette, melt the mint jelly in a saucepan over a medium heat, then slowly whisk in the lime juice and groundnut oil until emulsified. Stir in the chopped mint and season with salt and freshly ground black pepper.

  3. Cook the runner beans in a pan of boiling salted water for 2-3 minutes, or until tender. Drain the beans and refresh in iced water; once cool, drain again.

  4. Place the knob of butter in a frying pan along with enough water to cover the base of the pan. Season with salt and freshly ground black pepper and warm gently until the butter has melted. Cook the prawns in the mixture, turning once or twice, for 2-3 minutes, or until cooked through.

  5. Mix the beans, potatoes, red onion, sesame seeds and prawns together in a large bowl. Season with salt and pepper, drizzle with a little of the mint vinaigrette and mix until well combined.

  6. Spoon the salad onto serving plates and drizzle with the yoghurt dressing and an extra spoonful of the mint vinaigrette.

Ingredients

For the yoghurt and mint dressing

  • 150ml/5fl oz natural yoghurt
  • 1 tbsp chopped fresh mint
  • pinch cayenne pepper

For the mint vinaigrette

  • 2 tbsp mint jelly
  • 3 tsp fresh lime juice
  • 100ml/3½fl oz groundnut oil
  • 3 fresh mint leaves, chopped

For the salad

  • 350-450g/12oz-1lb runner beans, stringed and finely shredded at an angle
  • large knob of butter
  • 8-12 peeled tiger prawns
  • 300g/10½oz cooked new potatoes, halved
  • 1 small red onion, finely sliced
  • 2 tsp sesame seeds, toasted in a dry frying pan
  • extra virgin olive oil or sesame oil for drizzling (optional)
