Rocket and parma ham rolls with peaches

Method

Place the rocket leaves into a bowl with the olive oil and lemon juice and mix together.

Place some of the rocket leaf mixture onto each piece of parma ham and roll up.

Tear Gorgonzola into pieces and arrange between the rolls.

To serve, place three rolls onto two serving plates and garnish with the peach wedges.

- 100g/3½oz rocket leaves
- 2 tsp olive oil
- 1 tsp lemon juice
- 6 slices parma ham
- 55g/2oz Gorgonzola
- 1 peach, cut into wedges
