Beat together the eggs, milk and sugar in a bowl. Dip the slices of bread into the liquid, allowing it to soak in well.
Heat the butter in a frying pan and fry the egg-soaked bread until golden-brown on both sides, about two minutes per side.
Heat the maple syrup in a small saucepan and add the orange segments. Warm through for 2-3 minutes.
Serve the French toast on a serving plate with the oranges and maple syrup spooned over the top. Serve drizzled with cream, dusted with icing sugar and garnished with chopped mint.
