Roasted maple oranges with French toast and cream

Method


  1. Beat together the eggs, milk and sugar in a bowl. Dip the slices of bread into the liquid, allowing it to soak in well.

  2. Heat the butter in a frying pan and fry the egg-soaked bread until golden-brown on both sides, about two minutes per side.

  3. Heat the maple syrup in a small saucepan and add the orange segments. Warm through for 2-3 minutes.

  4. Serve the French toast on a serving plate with the oranges and maple syrup spooned over the top. Serve drizzled with cream, dusted with icing sugar and garnished with chopped mint.

Ingredients

  • 2 free-range eggs, beaten
  • 150ml/5fl oz whole milk
  • 1 tbsp caster sugar
  • 2 slices white bread
  • 25g/1oz butter
  • 2 tbsp maple syrup
  • 1 orange, segmented

To serve

  • 2 tbsp double cream
  • icing sugar
  • 1 tsp chopped fresh mint
