Roasted figs with balsamic vinegar

Method

Place the vinegar and sugar in a small saucepan and cook at a medium heat until the sugar has dissolved.

Add the fig pieces and cook until they are soft and caramelised.

Place the griddled ciabatta bread on a plate and place the figs on top.

To serve, drizzle the yoghurt and the honey on top and scatter over the thyme leaves.

- 1 tbsp balsamic vinegar
- 1 tbsp brown sugar
- 2 fresh figs, cut into four quarters
- 2 pieces ciabatta bread, toasted
- 2 tbsp Greek yoghurt
- 1 tbsp clear honey
- ½ tsp fresh thyme leaves
