Place the rice noodles in a large bowl and cover with boiling water. Leave for 5 minutes to cook, then drain the noodles and toss with the olive oil. Season with salt and freshly ground black pepper.

In a large bowl whisk together the soy sauce, sesame oil, lime juice and chilli. Add the noodles, coriander, chives, and carrot. Toss together and season with salt and freshly ground black pepper. Serve.

For the noodles
- 100g/3½oz rice noodles
- 1 tbsp olive oil
- salt and freshly ground black pepper
For the salad
- 1 tsp soy sauce
- 1 tsp sesame oil
- ½ lime, juice only
- ½ fresh chilli, finely chopped
- 1 tsp chopped coriander
- 1 tsp chopped chives
- 1 carrot, peeled and sliced into ribbons with a vegetable peeler
