Red cabbage salad

Heat the oil in a wok. When very hot and smoking add the cabbage and apple. Stir-fry for 4-5 minutes.

Add the ground ginger, red wine vinegar and brown sugar and cook for 10 minutes, stirring regularly.

Serve in a bowl and top with the chopped parsley.

- ½ red cabbage, finely sliced
- 1 apple, peeled and sliced
- ½ tsp ground ginger
- 2 tbsp red wine vinegar
- 1 tbsp brown sugar
- handful fresh parsley, chopped
