Prawns with almond and parsley crust

Pre-heat the oven 200C/400F/Gas 6

Mix together the almonds and parsley.

Rub the prawns with the mustard and roll in the mixture. Place on a baking tray in a single layer and cook for 5-6 minutes.

Serve warm or cold.

- 200g/7oz raw tiger prawns
- 2 tbsp Dijon mustard
- 100g/3½ oz toasted flaked almonds, crushed fine
- 2 tbsp chopped parsley
