Potato curry

  1. Heat the oil in a pan and sauté the onion for 2-3 minutes, to soften. Add the potato and heat for a further few minutes.

  2. Add the coriander seeds, turmeric, cardamom pods and sugar and stir together.

  3. Pour in the vinegar and reduce the heat and simmer for 10-12 minutes, until the potato is tender.

  4. Spoon into a serving dish and serve with a dollop of yoghurt.


  • 1 tbsp olive oil
  • ½ onion, peeled and diced
  • ½ sweet potato, peeled and diced
  • few coriander seeds
  • pinch of dried turmeric
  • few cardamom pods, crushed
  • 1 tbsp sugar
  • splash of red wine vinegar

To serve

  • Greek yoghurt
