Pork paprika with lemon chutney

Method


  1. Preheat the oven to 220C/425F/Gas 7.

  2. Mix the paprika and lemon juice in a bowl to combine. Add the pork fillet and allow to marinate.

  3. Heat the oil in a non-stick frying pan and sear the pork for 2-3 minutes on each side. Transfer to the oven and cook for 8-10 minutes, until cooked through.

  4. For the chutney, heat the apple, tomato, oil, vinegar, sugar and parsley in a medium pan for 6-8 minutes until softened.

  5. To serve, allow the pork to rest and then slice on the diagonal. Spoon the chutney alongside and serve with a wedge of lime and drizzle of balsamic vinegar.

Ingredients

  • 1 tbsp paprika
  • 2 lemons, juice only
  • 150g/5oz pork fillet
  • 1 tbsp olive oil

For the chutney

  • ½ apple, diced
  • ½ tomato, diced
  • 1 tsp vegetable oil
  • 1 tsp vinegar
  • 1 tsp sugar
  • 1 tsp fresh parsley, chopped

To serve

  • wedge of lime
  • balsamic vinegar
