Method

In a bowl, mix together the mascarpone, cream, vanilla seeds and icing sugar.

Place two chefs' rings onto two serving plates. Add the plums to the base of the rings and press down. Top up the rings with the mascarpone mixture and smooth down the top with a pallet knife.

To serve, carefully remove the chefs' rings, garnish with mint and drizzle with honey.

- 200g/7oz mascarpone cheese
- 142ml/5fl oz double cream, whipped
- ½ vanilla pod, split, seeds scraped out
- 2 tbsp icing sugar
- 2 plums, halved, stones removed
To serve
- sprig fresh mint
- drizzle honey
