In a pestle and mortar grind the mint and sugar together until they are well crushed.

Add the orange juice.

To serve place the mint topping all over the pineapple.
Ingredients
- 1/3 pineapple, sliced into thin rounds on a mandolin
For the topping
- 50g/1¾oz caster sugar
- 1 small bunch of mint leaves only
- 1 orange, juice only
