Pineapple 'carpaccio' with cardamom syrup

Method

Place the pineapple slices around a large plate in a fan shape and set aside.

In a saucepan, heat the sugar, water and cardamom and bring to the boil, then reduce the heat to simmer for 4-5 minutes to thicken the syrup.

To serve, pour the syrup over the pineapple and top with a dollop of cream.

- ½ pineapple, peeled and thinly sliced
- 25g/1oz caster sugar
- 100ml/3½fl oz water
- 3 cardomom pods, crushed
- whipped cream, to serve
