Peach soup with a mascarpone and chocolate chip quenelle

Method


  1. For the soup, place the peach pieces, sugar, lime juice, vanilla pod and water into a small saucepan and bring to the boil.

  2. Cook over a gentle heat for two minutes then remove the vanilla pod (you can save the pod for another occation) and blend until smooth with a hand-held blender. Allow to cool.

  3. For the quenelle, mix the mascarpone, cream and chopped chocolate together.

  4. To serve, pour the peach soup into a bowl. Using two spoons make a quenelle of the mascarpone mix and place on top of the soup. Scatter over the chopped peach.

For the peach soup

  • 1 peach, peeled, stoned and chopped
  • 55g/2oz caster sugar
  • 2 limes, juice only
  • 1 vanilla pod
  • splash water

For the quenelle<strong>

  • 55g/2oz mascarpone
  • 2 tbsp double cream
  • 25g/1oz dark chocolate, chopped
  • ½ peach, finely chopped
