For the soup, place the peach pieces, sugar, lime juice, vanilla pod and water into a small saucepan and bring to the boil.
Cook over a gentle heat for two minutes then remove the vanilla pod (you can save the pod for another occation) and blend until smooth with a hand-held blender. Allow to cool.
For the quenelle, mix the mascarpone, cream and chopped chocolate together.
To serve, pour the peach soup into a bowl. Using two spoons make a quenelle of the mascarpone mix and place on top of the soup. Scatter over the chopped peach.
