Pea and mint soup

Method

Melt the butter in a saucepan over a medium heat, and when bubbling add the onion and garlic and cook, for five minutes, or until softened.

Add the chicken stock, peas, cream and mint to the saucepan and simmer for two minutes.

Blend the soup mixture with a hand blender and pour into a clean bowl.

To serve, garnish with chives.

- 30g/1oz butter
- ½ onion, chopped
- 1 garlic clove, finely chopped
- 300ml/½pint chicken stock
- 300g/10½oz peas
- 2 tbsp double cream
- 2 tbsp fresh mint, chopped
- Fresh chives, to garnish
