Pan-fried sea bass with green bean sauce vierge

Method

For the sea bass, heat the oil in a frying pan over a medium heat and cook the sea bass for 2-3 minutes on each side, or until cooked through.

For the green bean sauce vierge, place the oil and vinegar into a bowl, season with salt and freshly ground black pepper and mix well. Add the chopped tomato and stir.

To serve, place the beans onto a serving plate and pour over the dressing. Place the sea bass alongside.

- 2 tbsp olive oil
- 1 fillet sea bass, skinned
For the green bean sauce vierge
- 1 tbsp olive oil
- 1 tsp balsamic vinegar
- salt and freshly ground black pepper
- 1 tomato, seeds removed and chopped
- 100g/3½oz green beans, trimmed, blanched and drained
