Panettone trifle

Method


  1. Place half of the panettone cubes into a tall glass and drizzle over half of the brandy.

  2. Whisk the cream with the vanilla seeds and sugar in a bowl until it holds its shape when the whisk is removed.

  3. Fold the melted chocolate into the cream and spoon half of the mixture over the panettone cubes in the glass.

  4. Top the panettone and cream layers with a layer of half of the clementine segments.

  5. Repeat the layering process to fill the glass.

  6. Finish with two Clementine segments and a drizzle of melted chocolate to serve.

Ingredients

  • 1 thick slice panettone, chopped into 2.5cm/1in cubes
  • ½ brandy miniature
  • 150ml/5fl oz double cream
  • 1 vanilla pod, split, seeds removed and retained
  • 1 tbsp icing sugar
  • 55g/2oz dark chocolate, melted
  • 1 clementine, peeled and segmented
