In a bowl, mix the self-raising flour, baking powder, eggs and milk to form a thick batter.
Melt the butter in a frying pan and ladle in the pancake mix a ladleful at a time. Cook until golden-brown on both sides.
Make a stack of pancakes and place on a plate.
For the fudge sauce, place the brown sugar in a saucepan with the butter and cream cook for three minutes to form a sauce.
Serve with the pile of pancakes and drizzle the sauce on top.
