Oriental-style noodle stir-fry

Heat the oil in a frying pan, add the onion, ginger and garlic and stir fry for 1-2 minutes.

Add the wild mushrooms and spinach and stir fry until softened. Add the noodles, season, to taste, with salt and freshly ground black pepper, and stir well.

To serve, place the noodle stir-fry into a serving dish and sprinkle with chives.

- 1 tbsp vegetable oil
- ½ onion, finely sliced
- 1cm/½in piece root ginger, finely chopped
- 1 garlic clove, finely chopped
- 100g/3½oz wild mushrooms
- 50g/2oz spinach
- 100g/3½oz ready-cooked udon noodles
- salt and freshly ground black pepper
- 1 tbsp chopped fresh chives, to garnish
