Mix the plain flour with the eggs and water and mix to form a smooth dough.
Using a pasta machine, place the noodle dough onto the fine noodle setting. Create your noodles by feeding the pasta through slowly.
To make the broth, place the chicken or vegetable stock in a deep saucepan with the soy, chilli flakes, lime juice and coriander. Simmer for five minutes then add the noodles. Cook for a further three minutes and serve in a large bowl.
