Heat the oil in a heavy-bottomed pan (CAUTION: hot oil can be dangerous, do not leave unattended).
Make a batter using self-raising flour and the sparkling water and mix to form a batter with a thick consistency.
Coat the onion rings and deep fry for 3 minutes until golden. Remove and drain on kitchen paper.
To make the dip, mix together the ricotta, tomato sauce, chives, Tabasco sauce, Worcestershire sauce and soy sauce. Serve the onion rings with the dip and enjoy.
