Moroccan rice with grapes

Method

Heat the vegetable oil in a large pan and fry all the spices together for 2-3 minutes.

Add the leeks and red pepper and continue to cook for three minutes until the vegetables are soft.

Add the cooked rice and the fresh coriander and stir together.

Transfer to a serving dish and garnish with the sliced grapes.

Serve.

- 2 tbsp vegetable oil
- ½ tsp turmeric
- ½ tsp oregano
- ½ tsp mixed spice
- ½ tsp ground ginger
- ½ tsp chilli powder
- 5 baby leeks, finely chopped
- ¼ red pepper, diced
- 150g/5½oz long grain rice, cooked according to packet instructions
- 4 tbsp fresh coriander, chopped
- 50g/1¾oz grapes, sliced
