Meatballs in tomato sauce

Method


  1. To make the meatballs, using floured hands, shape the sausagemeat into walnut-sized balls.

  2. Heat the oil and in a frying pan over a medium heat. Add the meat balls and fry for 6-8 minutes, until browned all over and completely cooked through.

  3. To make the tomato sauce, heat the oil, chilli flakes and garlic in a frying pan for two minutes.

  4. Add the tomatoes and cook for 5-6 minutes, stirring to break down to a thick sauce.

  5. Add the balsamic vinegar and fresh herbs and stir.

  6. Add the meatballs, stir together and season, to taste, with salt and freshly ground black pepper.

  7. To serve, pour into a large warm bowl.

For the meatballs

  • 150g/5½oz good quality sausagemeat
  • 1 tbsp olive oil

For the tomato sauce

  • 1 tbsp olive oil
  • ½ tsp dried chilli flakes
  • 2 garlic cloves chopped
  • 50g/1¾oz baby vine tomatoes
  • ½ tsp balsamic vinegar
  • 1 tbsp fresh basil leaves, roughly chopped
  • 1 tbsp fresh sage leaves, roughly chopped
  • salt and freshly ground black pepper
