Place all the ingredients, except the mint into a large bowl and whisk until the mixture forms soft peaks, when the whisk is removed.

To serve, place in a glass bowl and garnish with a sprig of fresh mint.

- 100ml/3½fl oz double cream, lightly whipped
- ½ lemon, zest only
- 1 tbsp white wine
- 2 tbsp icing sugar
- squeeze fresh lemon
- 1 sprig fresh mint, to garnish
