In a small bowl mix together the whipped cream and lemon curd.

Layer a glass with the strawberries, biscuits and almonds. Spoon in the lemon curd and cream mixture and garnish with the mint sprig.

- 50g/2oz double cream, whipped
- 50g/2oz ready-made lemon curd
- 25g/1oz strawberries, thinly sliced
- 25g/1oz cantuccini biscuits, crushed
- 25g/1oz flaked almonds, toasted
- mint leaf, to garnish
