Place all of the ingredients into a heatproof bowl placed over a saucepan of simmering water or double boiler to gently melt.

Serve with char-grilled bread.

- 200g/7oz Port Salut cheese
- freshly ground black pepper
- 1 shallot, finely chopped
- 1 garlic clove, crushed
- splash white wine
- ½ lemon, juice only
