Blend the biscuits, walnuts, and honey together in a small food processor.
Mix the mascarpone and double cream together.
Spoon half of the biscuit mixture into the base of a wine glass. Place half of the orange slices on top, then half of the cherries and half of the cream mixture. Repeat this with the remaining ingredients and finish with cream on the top.
Reduce six tablespoons of the cherry syrup by half in a pan over a high heat. Leave to cool then drizzle over the top of the cream and serve immediately.
