Indian-style sautéed potatoes

Method

Heat the oil in frying pan. Add the new potatoes, onion and garlic and fry for two minutes.

Add the curry powder, cumin and turmeric and fry over a high heat.

Cover the pan with a lid, reduce the heat and cook for 30-35 minutes until the potatoes are cooked.

Serve on a plate garnished with fresh coriander.

- 1 tbsp vegetable oil
- 250g/9oz new potatoes
- ½ onion, chopped
- 4 garlic cloves, crushed
- 2 tsp curry powder
- 2 tsp ground cumin
- 2 tsp ground turmeric
- fresh coriander, to garnish
