Honey, thyme and balsamic vinegar-roasted figs with honey and orange yoghurt

Method


  1. Preheat the oven to 180C/350F/Gas 4.

  2. For the roasted figs, cut off the tops of the figs and make a cross in the top of each. Squeeze gently to open the figs up slightly.

  3. Place the figs onto a large piece of foil and drizzle with the balsamic vinegar, honey and thyme. Seal to make a parcel by scrunching the edges together.

  4. Heat an ovenproof frying pan and place the parcel into the pan.

  5. Transfer the pan to the oven and roast for five minutes. Place the parcel onto a serving plate.

  6. For the honey and orange yoghurt, place the yoghurt, cinnamon, honey, orange zest and juice into a small bowl and mix well.

  7. To serve, open up the fig parcel and top with the yoghurt.

Ingredients

For the roasted figs

  • 3 figs
  • 2 tsp balsamic vinegar
  • 1 tbsp honey
  • 1 sprig fresh thyme, leaves only

For the honey and orange yoghurt

  • 100ml/3½fl oz Greek-style yoghurt
  • ½ tsp ground cinnamon
  • 1 tbsp honey
  • 1 orange, zest and a squeeze of juice
