Honey-roasted fig and red onion crostini

Method


  1. Preheat the oven to 200C/400F/Gas 6.

  2. Heat the olive oil in a pan, add the red onion and fry over a gentle heat for five minutes until softened.

  3. Add the garlic and sugar and cook for 1-2 minutes. Add the balsamic vinegar and cook for three minutes.

  4. Place the halved fig onto a baking sheet and drizzle with honey. Roast for five minutes in the oven.

  5. To serve, spread the caramelised onions onto the toasted baguette slices and top with the honey-roasted figs.

  • 1 tbsp olive oil
  • ¼ red onion, finely sliced
  • 1 garlic clove, chopped
  • 1 tsp soft brown sugar
  • 2 tsp balsamic vinegar
  • 1 fig, halved
  • 1 tbsp clear honey
  • 2 slices baguette, toasted
