Honey and vanilla rice pudding with oranges

Traditional rice pudding gets a little twist with the addition of honey and orange, but you can use whatever fruit you have available.
Method

Preheat the oven to 180C/350F/Gas 4.

Place the rice, milk, cream, vanilla seeds and honey into a pan over a medium heat and bring to the boil. Transfer to an ovenproof gratin dish and place into the oven to cook for 8-10 minutes, or until cooked through and golden-brown on top.

Serve garnished with orange slices, drizzled with honey.

- 100g/3½oz long grain rice
- 400ml/14fl oz milk
- 2 tbsp double cream
- 1 vanilla pod, split, seeds only
- 3 tbsp honey
To serve
- 1 orange, peeled and sliced
- 1 tbsp honey
