Grilled scallops

Method


  1. Preheat the grill to the highest setting.

  2. Place the scallops in their shells. Sprinkle the scallops with the cayenne pepper and polenta and place a lime slice on top of each.

  3. Place the scallops under the grill for 3-4 minutes, until cooked through.

  4. Sprinkle with the mint and Tabasco sauce, to taste. Drizzle with a squeeze of lime and serve immediately.

  • 3 scallops, cleaned, shells retained
  • cayenne pepper, to sprinkle
  • 1 tbsp polenta
  • 3 lime slices
  • 1 tbsp chopped fresh mint
  • splash Tabasco sauce
  • squeeze lime, to serve
