Griddled quesadillas with BBQ beans and cheese with cherry tomato and avocado salsa

Method


  1. Mash avocado with lemon juice, add 1 tbsp of soured cream, and season to taste.

  2. Heat the beans with the sausage, and add the BBQ flavouring.

  3. Brush two tortillas with oil, and mark crossways on a griddle pan.

  4. Cover one tortilla with the beans and cheese and add the avocado mixture to the other tortilla, press both together.

  5. Cook in preheated oven 200C/400F/Gas 6 for about 5 minutes, until the cheese melts and binds it together.

  6. Allow to cool slightly then cut into triangles from the centre like a pizza.

  7. Garnish with cherry tomatoes, dollop of soured cream and coriander sprigs.

  8. Serve on slates or tiles.

  • 1 tbsp vegetable oil
  • 1 pack of 15cm/6in flour tortillas
  • 1 tin refried beans
  • 1 smoked sausage, chopped
  • BBQ flavouring
  • 1 ripe avocado
  • soured cream
  • 1 tbsp lemon juice
  • 400g/14oz grated cheese (cheddar, Monterey jack, mozzarrella)
  • 1 punnet cherry tomatoes
  • salt and pepper
  • sprigs of coriander
