Mash avocado with lemon juice, add 1 tbsp of soured cream, and season to taste.
Heat the beans with the sausage, and add the BBQ flavouring.
Brush two tortillas with oil, and mark crossways on a griddle pan.
Cover one tortilla with the beans and cheese and add the avocado mixture to the other tortilla, press both together.
Cook in preheated oven 200C/400F/Gas 6 for about 5 minutes, until the cheese melts and binds it together.
Allow to cool slightly then cut into triangles from the centre like a pizza.
Garnish with cherry tomatoes, dollop of soured cream and coriander sprigs.
Serve on slates or tiles.
