Green bean, red pepper and brazil nut salad

Method

Place the green beans into a steamer and steam for 4-5 minutes, until tender. Transfer to a bowl, add the rest of the salad ingredients and season to taste with salt and freshly ground black pepper. Stir well to combine.

Spoon into a serving bowl and serve.

- 75g/2½oz green beans, topped and tailed
- 1 red pepper, sliced
- 2 tbsp chopped fresh coriander
- 2 tsp sesame seeds, toasted
- 30g/1oz brazil nuts, chopped
- 4 tbsp olive oil
- 2 tbsp balsamic vinegar
- 1 tbsp red wine vinegar
- 1 tsp Dijon mustard
- salt and freshly ground black pepper
